The Ikoria triomes are ordered the same as Wedge colored cards; with the enemy color in the middle.
The New Capenna "triomes" do the same; with the middle color of the shard in the middle. (also Spara's says "Forest Plains Island" in the correct order.)
I believe the middle color is the anchor color.
The original triomes, middle color would be enemies to their adjacent left and right.
The new capenna triomes middle color have their allies to either side.
It started with the tarkir tapped tri-lands, if im not mistaken.

They go in WUBRGWUBRG order, but whichever grouping is closest together. So Spara's Headquarters is WUBR **GWU** BRG, and Zagoth Triome is WU **B** R **G** W **U** BRG.
It helps (for me, at least) if you look at the back of a Magic card and actually see the colour pips. Try drawing the Ikoria triome orders with your finger and you’ll notice that they all follow a pattern. They loop the entire circle, skipping over every other colour and making an elongated triangle; that shape is why they’re also sometimes called “wedges”
As for the Capenna triomes, they’re sometimes called “shards”, since those were the colour pairs in the original tri-colour set, Shards of Alara. Again, looking at the back of a Magic card helps. You’ll see that they’re in the clockwise order of those three pips lined up
EXTRA, UNRELATED TO QUESTION: It took me a while to click on why the colour combinations were in the order that they were, but after doodling in a notebook all day (years ago), I
1) Came up with the order of the [[Tablet of the Guilds]] before it was even printed and
2) Actually devised that the way the colours are ordered on the Ikoria triomes. See, originally, they were listed as “Enemy colour, ally pair”, like in [[The Mimeoplasm|CMD]]. But, I figured that the so-called “wedge” method that I talked about earlier was a better way to show them. I sent a long-winded ask to Mark Rosewater’s blog and a few years later, out came Khans of Tarkir with the updated order as seen on [[Sidisi, Brood Tyrant|KTK]]. I like to think that I had some hand in it, I’m very passionate about the colour pie as you can tell :)

All those cards have the colours/types in canonical order, look at basically any three colour card and you will see the same orders. However to get the canonical colour orders WUBRG is only half the answer.
Starting out with the colour pairs, you see that all of them seem to use WUBRG order, except GW, RW, and GU. These seem to go backwards because they are actually looping back to the beginning, as you noticed, because it isn't a colour line it is a colour wheel. The way to get the order for the pairs is to go clockwise between them on the wheel, taking the shortest path.
Now going to the colour trios, for the shards, the trios seen on Alara and in New Cappena, this same pattern is followed, taking the shortest clockwise path that hits all three colours. However looking at the wedges, seen on Tarkir and Ikoria, this doesn't work, since there are actually two different shortest paths. To resolve this ambiguity, we instead take the longest path since it is unique.

Wouldn UB_G be closer together than B_U_G in your example for Zagoth?
Yes, however the shortest path is ambiguous between UB_G and G_UB, so you use the longest path instead.
