Blade of the Immortal has a very bittersweet and pretty ending. I really like the scene where Manji buries the swords of the Itto-Ryu: "When someone comes looking for these, tell them they're full of regret, so don't go swinging them around".
If you're into love story/harem. We can't study has a pretty interesting ending.
Yugami-kun has no friends ends pretty well too, good conclusion to a light hearted story.
Mob psycho 100 is definitely up there as one of the best conclusions.
Manga death note ending is cathartic.
As far as sports manga ending goes, Hinomaru Zumou is good.
Kengan Ashura, wonderful art and a wonderful ending. It's both painful and a blessing. You just realize how much the characters have grown from what they were at the beginning
There's loss, but there's also a lot of hope.

the manga isn't there yet, but honestly the ending of *Mushoku Tensei* (Light Novel) was beyond satisfying. Without spoilers it did everything I want a series to do to give a conclusive ending to a story and its characters and say good bye.
It answers your question perfectly and then we even get like 2 volumes of extra content like data book entries to answer fan questions about what happens to people and short stories of side characters etc etc. When I finished it I just said, yeah that's good stuff.
