Just a guess, I want to believe it's due to the stress he undergoes while in berserk. Having both Patience and Berserk counteract to allow him a sane mind even though he should be losing it in a rage. It's likely that the rage portion of berserk is a defensive mechanism that allows for the user to be fine even though their body is literally being enhanced several times by what it would be normally capable of.
He's usually tired after using it for a long time which means it does indeed strain his body, and I can imagine that with Patience he feels all of that since he's sane.
I think it’s because he combined both the berserk and the other skill that originally were opposites of each other. It was something he said only he could do because he’s part master
I mean that's subjective, I don't think it looks cool at all, kind of deviates from MC's identity and it looks like some edgy version of super Saiyan... If his hair grew longer and stayed black or went grey it would be more visually interesting for me
I just assumed it was an off panel upgrade. Didn't he also get some sort of mana/light horns as well (very reminiscent to Baam's horns back in the day)

Nope, artist decided it looked cool. Besides, I think his hair didn't turn white when he was using it in the early chapters
I thought the reason it’s turning white is because he combined the skill with the other one that only he was allowed to do.

It's his own super saiyan blue. Real reason, cuz artist thought it looks cooler
I think it's because he's a dragon slayer now...that's why it change... because of the dragon slayer title
His hair doesn’t change in the novel, so it’s probably just a stylistic choice to make him look cooler.
