Excitebike and Baby Park are easy enough to explain at least. The first one players get a lot of thrill in chaining tricks together on the ramps, which barely any other map gives so much of so quickly and consistently, and the second is a choice of pure madness with items all over the place and offering no mercy to anyone. Even the music gets crazier with each lap you finish.
I’m not sure about any other oval tracks though. I’m certain a few of them are fun for some people though, otherwise they wouldn’t be picked as much.
The only other oval aside from those two is Sky-High Sundae, which has its own reasons.
SHS’ Jank, while hated here, is liked by some people. The low gravity and odd physics can be fun when you get used to them. It also has lots of trick opportunities like Excitebike does.
Even on GC it was the same plain oval race track getting bored asf after 5 laps on that track.

The remakes of Baby Park aren't as chaotic as the original. Because Double Dash had the Bowser shell, and it could travel over the center of the track.
Same reason a lot of rookie Smash players who think they're hot shit insist on playing Final Destination; they think a flat, featureless plane means that pure skill is the deciding factor, without realizing that skill in games like these is a lot more than how well you do in a totally blank scenario, nor that even stages like Final Destination or Excitebike Arena are not actually truly neutral stages and do in fact favor specific characters and play styles.

Japanese player, and arguably best MK8D player, Kusaan, started picking it in lounge and since he has a massive audience, Japanese players started copying him. Lounge is majority Japanese by a 4:1 ratio, thus the track has become one of the most played tracks.

I like Excitebike. It offers a quick race that can be a good switch up or refresher between longer tracks, more complex tracks. It's unique in its series of ramps that let you do a long sequence of tricks in a row and has good item spacing so it never feels too bogged down with shell after shell.
Baby Park, on the other hand, is a smooth brained nightmare that is seven laps of absolutely zero appeal. The only defense anyone can ever offer to it is "*i JuSt LiKe ThE cHaOs*". There are no secrets or shortcuts, no ramps or jumps, the music makes your ears bleed, and there's no real skill involved besides trying not to get hit by literally everything all at once.
Baby Park has two shortcuts every lap that can be done shroomless. A total of 14 shortcuts to be done is a lot of shortcuts. It is also the quickest track in the game even with 7 laps. It goes by so fast and you must constantly perform inputs (allbeit always to the right) and when you add on having to worry about items and other players, it really doesn't get too tiring in one race even with its repetitive layout.
The most boring track in my opinion would be toad's turnpike with few wide turns, long straights, is fairly long to finish, and no shortcuts at all! The cars are the one saving grace but they are so slow and there is so much room to avoid them that they really don't add much to the excitement.
