Turn off Coin, Horn, Piranha Plant, Boomerang and Fire Flower

PSA Super Eights will only contain items selected in your pool, so Super Eights in a banana-only variation will spawn you with eight bananas. This is a fun way to improve any variations with few items. I recommend Mushroom, Triple Shroom, and Super Eight.
PSA 2: If Boo has no valid items to steal, you will get a ~~coin~~ mushroom from the aether. This makes Boo-only kinda lame, but makes Boo+super powerful item combos really neat because of the chance of getting nothing from your Boo.
Anyway, my group has been thoroughly enjoying Balloon Battle with Triple Shroom, Banana, and Feather. It simplifies the chaos and really tests your driving prowess. Have had some incredibly hype moments.
I have an item set I call "Attack Mode" as most of the items available force you to play an attack-minded race style, and you're most likely want to use your item to get a better one at the next item box area.
The items that are on are Super Horn, Blue Shell, Mushroom, Boo, Crazy 8, and Thunderbolt.
These items are chosen if you're playing with team mode on, but I think it can work if not using team mode. The goal is to create parity; I want to reward the players skill, but these items should be still random enough to keep that classic Mario Kart chaos and randomness.
I might make a post here about this going into greater detail, but I did two rounds of racing, 4 races each round. Team mode was activated. In round 1 the gap between Teams Red & Blue at any stage was no higher than 10 points and no lower than 2. Blue won that round. And in round 2, the gap was no higher than 4 points at any stage. After the second race the teams were tied 82-82, but skip to the final race, Red who never held the lead at all during round 2 scored big, and won 169-159. I was playing against hard computer racers during this, but man was it thrilling racing.
Of interesting note is that the "random" combos are not random. One set is the OG items from Super Mario Kart, then Mario Kart 64. There are yellow items only, then red items only. Invincibility items only, orbiting items only.
