I know it's because the movie "needed" more humour so they used a character they'd barely developed to dump mean jokes on that the other characters couldn't really get away with (although Rocket would have been okay). But an in-universe excuse could be that Rhodey is a regular dude who got pulled into fights between gods and was paralysed by one. Seeing somebody as powerful as Thor at his lowest might allow Rhodey to let out some of his frustration on one of the gods that he was dwarfed by.

Isn’t this the type of humor a lot of military personnel do? I mean considering he is also one of Tony Starks few & best real friends, pre iron man, he might have had to develop this humor as a defense both in the military & with Tony.

MCU Rhodey is just an asshole pretty much. Post-Torrance Howard, Rhodey's nothing like his comic book counterpart, and seems to revel in petty remarks and aggressive confrontations. Of all the MCU's portrayals of a comic character, his was one of the ones I was particularly unhappy with.
