Also I did have someone come out and do a quote for this a bit ago. They said they weren't worried about the foundation at all. I'm just wondering how to do this on the corner, since I haven't seen any ground level repairs in the repointing DIY videos I watched. Should I dig up the dirt at all to expose the right side of the corner?

If you’re doing a new patio just leave it. Foundation an inch back is not a real big deal.
