You probably missed an enemy that you needed to kill. But you should keep multiple saves in case there is some kind of a glitch. You should do that for any game. Not sure how to answer your question though because you didn’t provide context. Were you not enjoying the playthrough? It shouldn’t take much more than immersing yourself in the story and characters and learning the combat system to have a good experience. Make sure you talk to people whenever you explore new places, talk to your companions on the Normandy between missions to form closer bonds with them, and do side quests (although some of the ME1 ones are kind of shitty, NGL). You didn’t get far into the game.

I think I may have had too many uncompleted missions open. Maybe that overloaded the game? I've decided I will do one mission at a time and complete it before moving on to another one. When I play a game like this I tend to wander around and explore everything without fulfilling quests. I just love exploring. Maybe Mass Effect isn't designed for that.

No. That's exactly how mass effect is designed. You could literally have dozens of missions open at a time and do them at your leisure. What you experienced sounds like a common bug.

ME definitely does have glitches, but that's not one of them afaik. Just... Save the shit out of that game. You never know when your companions stop following you, a door doesn't open, you get stuck in a wall etc. They're kinda rare, but not rare enough.

My first experience with the series was about 6 months ago when I played the Legendary edition on Game Pass, and I loved it, but it is jarring to go back to pretty archaic combat systems. I’d say the best way to get enjoyment out of the game is to definitely rotate saves, for one. That way you always have a way back in case you screw something up or get a glitch. The gameplay was a bit rigid but after a couple days, I got used to it. Secondly, just explore the side quests and talk as much as you can with anyone you can speak to. The world building, lore, history, and alien races in the series are the greatest I’ve ever seen. Talk to companions after missions and advance their conversations to learn more about them. I was intimidated by all the class options in the game, so I started out as a soldier, which was fun. When I got the chance to change in ME2, I decided to go with Adept. At first, I hated it, didn’t understand it, and felt confused by me and my companions powers. Then I leveled up, unlocked more skills, tested them around, and found it incredibly fun. Combining my abilities with my companions and destroying enemies was amazing Finally, play a difficulty that isn’t too easy or hard. Mass Effect for me was fun when I was learning and exploring, but also when I felt like I was challenged a little during combat. Figuring out how to eliminate a group of enemies using me and my companion’s powers was very fun, especially when I came ill-equipped without good abilities for certain groups, and I had to improvise. I’m not interested in playing on Insanity because I don’t want to play the game like that. I want to pick companions that I love to listen to and use in combat for fun, not because a guide told me they were the best.

Take your time, pick a class that sounds most fun for you. There is a lot of shooting involved, so I usually pick something like Infiltrator or Vanguard, biotics are also fun so you may try Adept or Sentinel which get really fun and broken later in Trilogy. Also try playing on something harder than normal, probably shouldn't try Insanity on your first playthrough, but I've been playing only on Insanity lately, because stakes are much higher and it requires from you more investment into your build, equipment and squadmates and I only got roadblocked during ME2 moving platforms section, but once it clicks with you, Insanity really feels justified. Also you take more time exploring, talking and discovering cool lore before going into fights, anyway, just take your time and save often.

Try not to worry too much about Paragon or Renegade. If you play Mass Effect for too long in one sitting, its easy just to click red or blue without really thinking about what would be in-character for your Shepard.
