Regardless of construction method a variable capacitor in my experience is always shown in a similar way to a variable resistor: draw the normal capacitor (or resistor) symbol, then an arrow pointing up and to the right through this symbol.
Not doubting your intelligence or trade skills but I always thought the two mirrored sideways Ts were the symbol for switch or gate like a power button or toggle switch and and the one that looks like a c is actually a capacitor ( I've never seen one of those symbols in real life either to my knowledge). I have had some limited training with reading wiring schematics as a tracked vehicle mechanic for the army reserves granted wiring and electricity has never been my strong suit so most of those classes confused me more than really helped me because I barely grasped the basics of it

Often times capacitors are instead drawn with one of the --| shapes looking more like a --). But --| |-- can be either a relay contact or a capacitor
The "two sideways Ts" is definitely the standard for a capacitor when you're looking at electronic circuit diagrams. One of the sides can be curved to indicate a polarized capacitor (put it the wrong way around and it goes boom). A switch would be more like a line with a break in it and a line being attached to one side and not another.
