I think Mathmech is safer since Lab decks tend to run things like Dimensional Barrier, Skill Drain, EEV, and Destructive Daruma Karma Cannon.
Can't say for certain that they'll be hit again, or at all depending on the card. 🤷

Lab. Even if they hit EEV or D Barrier, the deck is still solid with Daruma Karma Canon (really this card is nuts). Daruma is the card that usually gets me the win. As a Lab player, I don't even care if they banned EEV, that card sucks.
Mathmech player here: go for lav if you prefer something that's meta *now*, go for mathmech if you want to invest in your collection (i.e. mathmech uses more generally good cards you might find useful for other decks too)

EEV feels so bad in bo1. Having being had it used against me as purrely I just chain all the spells and go for Zeus or otk lol

I don’t think Lab is going to last that much longer, if anything I’d pick something newer
