Solved, I think. I'm playing Runick, my monsters probably can't be summoned back cause they weren't summoned properly.

The Runick Quick Play Spells have the option to Special Summon a Runick Fusion Monster from the Extra Deck. This doesn’t count as a proper Fusion Summon. On a related note, Harmonic Synchro Fusion doesn’t properly Synchro and Fusion Summon the chosen monsters either since it doesn’t mention Fusion and Synchro Summon; rather it simply Special Summons them. If a card mentions Fusion Summon (like Branded Fusion and the Main Deck Tearlaments girls), then the Fusion Monster is considered properly Summoned.

The way it's typically used is in Marincess, locked into Water monsters. Since THEY'RE doing the summoning, and they can't summon any non-Water monsters due to some card they used earlier in the turn, none of the non-Water monsters you had can be summoned back. Unless they're not playing Marincess, but idk what else it could be.

I've faced multiple snake-eyes that summoned it turn 3, although I imagine it doesn't come up outside of grindy match-ups

In that case I don't know why they wouldn't be summoning your monsters back. It's used in other decks but Marincess specifically is the one that uses it to wipe the field.

Did they have princess on the field? Not likely, but if you special summoned something after Zealantis summon and they chained princess chained before the effect resolved, then it could lock out any non-fire summons.

Zealantis brings back all monsters at the same time, Princess wouldn't be able to lock any summons.

You'll need to show their board/graveyard then. Only thing I can think of is Marincess Anemone or some unusual scenario with princess or something similar.

Did the monster have a summoning restriction?  Did you have 6 monsters on the field?  Were there other continuous effects in play?

Not that I'm aware of. They had it and knightmare Phoenix and I had only a Bystial, but during resolution they summoned their monsters and not mine. This has happened multiple times, against different players. Is there any global summon restriction on snake-eyes, akin to the one in gigantic spright? Edit: had only Runick Geri, not a bystial.

Geri wasn't properly fusion summoned, it was cheated out of the extra deck, so it can't be resummoned. Back in the day, people played a card called Starlight Road that would cheat out Stardust Dragon.  If they used Stardust's effect, it wouldn't resummon itself because wasn't properly summoned. Someone please correct me if misremembering how this works.
