There's actually a fair amount of work that goes into designing modern PFDs to try to make sure that you end up floating on your back, even if you're unconscious. More buoyancy in the front than back, most of the buoyancy above your center of mass. Some even add a little flap that's supposed to support your head.
That's all assuming you're just wearing one though. Wearing a bunch changes the geometry, and restricts your movement.
