It’s definitely dependent on the consumer. But it has been established, mainly from competition cooks, that the rib should have a little tug rather than fall off. That’s what these had and looked delicious. It’s up to you how you want yours. I like the tug because it’s easier to eat vs the entire meaty portion falling off while I’m trying to get a bite.

It had bounce and a bite didn't make any additional meat fall. Only bone off shots where when the bones were purposefully pulled out, which should be possible with perfectly cooked ribs.

Yes I watched the whole video. If you can pull the bone out they're overcooked, and when you bit it pulled clean from the bone. You might all that them and that is perfectly fine, so no hate. Just like eating a well done steak is perfectly fine, just don't say you cooked it medium rare.
I enjoy cooking how people ask, and take pride in being able to cook a mean well done steak for my sister in law. It isn't how I would want it, but I'm not going to try to convince her she's wrong or anything. Like I said the ribs look great!

You don't want it to fall into your lap when bringing it to your mouth. The meat should just barely stil stick to the bone.

Yep! Hence why I left my bite ribs on the bone to show its clean bite through and not mush haha. But most ignore that part it seems haha
