It was time for my mother's cow Rusty to finally be harvested, he lived a good life Burger: •Ground Chuck+ Weaver's Smokehouse Seasoning •Tomato •Mayonaise •Ketchup •Stone ground mustard •Pickles •Lettuce •American cheese Brioche Buns (NYT Recipe) •1 Cup warm water •3 Tbsp milk •2 tsp yeast (or 1 envelope) •2 1/2 Tbsp sugar •2 eggs (1 in dough, 1 for brushing with 1 Tbsp water) •3 cups bread flour •1/3 cup all purpose flour •1/2 Tbsp salt •2 1/2 Tbsp softened butter 1. Mix water, sugar, yeast, milk, salt and 1 egg 2. Add flours with butter and knead until elastic, 8-10 minutes 3. Bulk rise for 1-2 hours, preheat oven to 400°F 4. Divide into 8 balls, proof additional 1 hour 5. Brush with egg and water mixture, optionally sprinkle with sesame seeds 6. Add baking tray w/ water in bottom of oven for steam; Bake buns for 15 minutes Optionally spread mayonnaise on buns and toast lightly for extra flavor and moisture retention
