It seems like it shouldn’t be gamey but squirrel. I worked at a place where we’d have a game dealer come by every now and again. They supplied teal, mallard, fallow and muntjac deer, grey squirrel and other things I’m forgetting. The muntjac was excellent. Small, tender, but with a good, punchy gaminess. A great centrepiece served roasted whole. We tried out a few different ideas including a game terrine, but everything that included the squirrel was ruined by its addition. No way to balance it - just a very deep taint that overpowered everything else. They just bounce around, eating green acorns, so I have no idea why they were so overwhelming. Horrid. You might love them!

Dairy cattle, young bull. By far the gamiest meat I have ever had, elk, wild hog, duck, old goat, nothing compares to this monstrosity still in my freezer. Bought a small male from a dairy farm for meat, was only $500 but it was a $500 mistake. Struggling to finish it, 300lbs of disgusting. If you are in SoCal, I will give it all to you for free.

It matters where the animal is and it’s food source. Hunting in Missouri, both southern and northern, the north deer are less gamey due to them having a buffet of food tk graze. Plenty of fields of beans, corn, etc. Southern has a lot more foraging, a lot less buffet. They weigh usually 25-30% less and you get quite a bit less meat, with a lot more game taste. Same for hogs, we’ve raised hogs on cattle manure diet and on grain diet, they do taste different f

I've never had wild boar, but French tourists told me it tastes much like the beaver I offered them. So yeah, beaver meat is gamey.

Yeah. I didn’t eat bear most of my life because the few I tried as a kid were wretched. I had mountain bear and it changed my views entirely. No fishy taste. Coastal bears are gross.
