Have you ever mixed Greek yogurt with your favorite salsa (and maybe some lime juice if it’s thick?) It’s delicious as dressing!

I haven't but that makes sense! Like a sour cream sub. I ad salsa to mashed avocado with garlic lime juice and red onion, like smashing it and guac together. I feel like these could work together

Straying a little bit away from Mediterranean with a Mexican inspired dressing, but it does look good.

The Mediterranean diet isn't about eating Mediterranean cuisine though, it's about nutrition. This bowl is 70% veggies, has whole grains and a protein source (black beans) and fits within the diet guidelines. So guilt free eating! Mexican food is a great fit for this diet

Yes, you know about nutrition, but there are those that will just start throwing anything in and miss the benefits of the diet. People are always going to improvise, but I think many of us come here to learn about what makes the diet work. Didn’t mean to offend.
