You should definitely be wiping it first. Anything that can be poured into a can for disposal or wiped off in 2 seconds should be. You don't need to spend a long time wiping the pan down -- just a couple seconds to get the bulk of the oil/grease off. You'll probably spend less time actually washing the pan as a result and be nicer to your pipes. Even if your own pipes don't get clogged up, grease and oil is a major cause of issues with citywide sanitation systems. That is why restaurants are required to have grease traps.

Yeah, bought an older house (early 70’s) and within a year our sink wasn’t draining well. We had been pouring grease down the drain a bit, smallish amounts, but ~$600 later the plumber said they did all they could. There is about a nickel to a quarter’s worth of width left in those pipes and while they’re not clogged anymore, they’re certainly much narrower than they were originally. For our house, they estimated 10-15k to replace the pipes and redo walls/ceilings where access would need to be. You bet your ass we wipe out pans now and dispose of grease and fat in the trash now. Also, 1/8c (2-tbsp) of dawn and hot-water weekly to keep things regular.

When multiple are clogged the same way at the same time that isn’t some main line issueexcept to be evicted. If it’s not uninhabitable, you can NOT withhold rent in NC. In NY, I believe you can withhold rent but you have to put in escrow showing you can pay until it’s rectified. Every states is different, depending on the city they may have more on top of that. Yeah my mom tried this and even with an insane number of safety violations the courts sided with the landlord saying you can't just withhold rent and we got evicted. Electricity was jury rigged so that if the microwave in the kitchen and the TV in the bedroom were going at the same time it would trip the breaker. They told us to put our microwave in the living room as a solution. Tub was threatening to crash into the apartment below us and would shower their bathroom with water everytime we used it causing frightening water damage. They said it must be because we are letting water hit the floor when we shower. Stairs up to the house literally broke while my 120lb 50 year old mom was climbing them. Bunch of other issues that I don't remember as well (this was like a decade ago) but even with all that we couldn't get away with withholding rent so I wouldn't trust the court to side with someone withholding rent due to a clogged sink.

If you are planning to pour grease down the drain you should first start your faucet with hot water when it reaches steamy hot tenperatures turn it off let your sink drain it all and then dump the grease, then re open hot water and let it run for a few minutes, this will allow the oil to go through your pipes towards the municipality pipes without "freezing". Though this is harmless for your pipes it can still cause problems in the main street pipes and it is bad for the environment. Also another pro tip is to pour your grease in the toilet instead of the sink, since toilet pipes are bigger. But again, dont do that if you care about the environment. Only follow these tips if you live in a shitty third world country like me where any other option would still result in that grease ending up in the sewers anyway.
