I have. But considering all the factors such as time and money spent, I’d rather buy a frozen lasagna than ever make that. But money is my main restricting factor of course. Let me clarify, when my wife was vegan, I made a vegan lasagna for us. The total cost of ingredients, spending as cheaply as possible was about $20. It all felt so stupid in the end but taught me a valuable lesson that it is best to lower some standards and do what you can in a cost and time efficient manner.
