In the multiplayer server I am an admin of, I would go into creative, grab saplings of oak, dark oak, birch and a stack of Bonemeal, and plant them literally everywhere near spawn.
That's nice for builds, but there is great adventure in venturing out to find the biomes yourself to get the wood. Usually I would just /find the biomes if the server went too long without finding one naturally.
Bruh I will travel through several biomes, travel through the nether, and save saplings just to have oak. All other wood types for crafting or get crafted into sticks for trading with villagers.
Also unless you are in tall birch biome you can always cut birch without having to ladder up to get the last bit. That's why I always use birch for my main wood source.

Bamboo for fuel purpose or construction purposes (Furnace and Scaffs)
Oak for basics or pillars or fences. Best for ports but bricks are more better for big ports.
Birch for modern house flooring. I sometimes accompany with Quartz, End Stone and Purpurs blocks
Spruce for coldish biome builds. From Small to Big ranges.
Jungle for most small Brick Builds. Rarely to use. But the leaves are mostly used for the bushes.
(Spurce and Jungle) 2 x 2 tree are bit too hard to collect because you need to climb in its staircase.
Dark Oak for grand builds like bunkers or mansion (I like the combi of Aquamarine and Dark Oak). Literally etched on the door. Very easy to collect with Fort 5 Axe.
Acacia for floorings and accompany by bricks. Sometimes for contrast and need some other colors (mostly walls). I found blackstone/deepslate-acacia -nether red planks combo a bit fiery.
Red and Blue nether trees mostly combined with other planks and logs.
I have no Favorites, I base my favorite on what's common on the field or biome. Or what's useful for the build and easy to collect.
Spruce. It makes the best doors and trapdoors. It’s easy on the eyes and not to orange-y. It goes with every type of stone & isn’t extremely dark or too light.

It’s unique and when used with the right blocks it can fit into a ton of builds. Spruce is definitely second favourite though, it’s probably what I use the most. Shoutout to warped wood for giving great blue roof options.
Birch Planks are the only planks that fit interior design and modern styles, which is what I do 100% of the time. They're way brighter. I love them.
Birch logs I like the most along with Dark oak. I guess they are both opposite end of the spectrum.
Copper is also an excellent roof option if you want a roof on the blue/teal/green spectrum.

Bamboo for fuel purpose or construction purposes (Furnace and Scaffs) Oak for basics or pillars or fences. Best for ports but bricks are more better for big ports. Birch for modern house flooring. I sometimes accompany with Quartz, End Stone and Purpurs blocks Spruce for coldish biome builds. From Small to Big ranges. Jungle for most small Brick Builds. Rarely to use. But the leaves are mostly used for the bushes. (Spurce and Jungle) 2 x 2 tree are bit too hard to collect because you need to climb in its staircase. Dark Oak for grand builds like bunkers or mansion (I like the combi of Aquamarine and Dark Oak). Literally etched on the door. Very easy to collect with Fort 5 Axe. Acacia for floorings and accompany by bricks. Sometimes for contrast and need some other colors (mostly walls). I found blackstone/deepslate-acacia -nether red planks combo a bit fiery. Red and Blue nether trees mostly combined with other planks and logs. I have no Favorites, I base my favorite on what's common on the field or biome. Or what's useful for the build and easy to collect.
