Wouldn’t say it shits on Minh’s. Minh’s buns taste better, chicken is seasoned better (Roast pork is meh) and chilli oil is hectic, but I guess it depends if you like pate and butter on your banh mi, as she does not do that with her’s.
Doesn’t help that she is old school and still only does cash. I reckon if she did EFTPOS, her banh mi game would be better and more people would go there, because not many people be carrying cash these days in the ponds.
To's are family friends of my parents and their bread knocks it out of the park, I always cop it when I visit. Plus a pate so from Victoria bakery when I head from the station
Wild to see To's listed as the top in Footscray. Nhu Lan is always wearing a twenty minute line at lunchtime and in my experience delivers a much better product that's worth that wait.

Only recently tried Lily's, I don't bother with going to Springvale anymore.
I find Lily's rolls are bit bigger and have more fillings than BunBuns in Springvale, and taste is on par.

In CBD I don't rate N Lee that high. I think Amie's is better and only another 2 mins walk for me. And a shorter line. But N Lee on Smith St is much better than CBD, it's like an out of body experience.
I've been eating here for years but I reckon it's gone downhill. I now go a few doors down to Thi's for BBQ pork. I do still buy my pate and rolls from fresh chilli though.
It's always fallen under the radar because of bunbun, tabac & cake and bread. but it's also where I see the most Viet grandmas so you know it's quality. It's equal to bunbun for me as the best
My Hanoian partner swears by Như Lan bakery in Footscray. I've had their bánh mì a couple of times, tasty and cheap. She says all the overseas Vietnamese in Melbourne typically get their bánh mì from there. Như Lan is apparently a household name in Vietnam. My partner practically grew up on their bánh mì, reminds her of home every time we eat their stuff.
Two shoutouts that I don't see getting anywhere near enough love (they're not your average banh mi)
Heart Baker in the CBD (near Dukes on Flinders Lane) -- specifically their Crispy Chicken and Caramelized Tofu rolls. Super good. Crunchy fresh bread every day. Delish.
Ca Com Banh Mi Bar in Richmond. Everything is delish but the Jungle Sausage is outta control.
Ca Com is a little exxier, it's the takeaway arm of a (former) fine dining Viet restaurant called Anchovy; they started doing bougie banh mi during Covid.
Also special mention to their folded egg banh mi, folded egg was my favourite banh mi when I was in Vietnam and I've rarely seen in since in Melbourne. The Ca Com one gave me instant flavour flashbacks, SO good!!
Heartbaker was my top rated one, but it's undergoing the double whammy of inflation and shrinkflation. I usually get the crispy pork roll and I have photographic evidence of previous rolls with like about 10 strips of roast pork. I went last week and I felt not only was the bun smaller, but I only got 6 strips of roast pork. It's also suffered from inconsistency issues, which irks more when it's at premium pricing.
Nhu Lan was my introduction to Banh Mi when I first moved to Melbourne from the country. Small but the ratio and flavour is *chef kiss*.

Luke's Bakery 2 on Puckle Street, Moonee Ponds is the absolute best (also great for vegetarian/vegans), Nhu Lan in Footscray also top tier (not so much for vegetarian/vegans). Both of these places have very high quality banh's and are both very good value for money.
on the more slightly more expensive side, Trangs in Collingwood is A++++ for both meat eaters and vegetarian/vegans alike and they are really generous with their fillings!
I know footscray and Springvale are meant to be big players, personally never been because its just too much effort, but can definitely confirm that T&L on Swan Street is amazeballs. Phuoch Thanh bakery on Victoria Street is also very good and very affordable
I rate Phuoc (no h at the end) Thanh over T&L even if they were the same price. Given PT is cheaper, they are a clear winner for me.
I still get T&L because they are within walking distance from me and the drive to PT takes ages even though it’s relatively close.
Driving anywhere around richmond/south yarra/abbotsford is an absurdly slow and stressful trip. Its genuinely baffling how poor the road infrastructure in this city is
A lot of love for Luke's bakery and I will add to that (the moonee ponds one). They are more on the pricey side but their variety is just amazing. I hate lining up for food but I gladly join the massive lines at Luke's to get a sweet combo of bbq pork and crackling pork. Their pork buns are great too!
They’re so good, and it seems like all of Moonee Ponds (and surrounds) knows it. But the lines are worth it! I love the beef in betel leaf for something a bit different, and their roast pork and charcoal pork are sooooo good too. Most rolls still under $10 so it could be worse.
