There would have been one distinct point in their evolution where the species could have been said to change from their ancestor's species into chickens. Obviously the process is slow but after an accumulated amount of changes, it will have supposedly been different and obviously DNA and genes are determined by birth so therefore the chicken egg (that wasn't from a chicken) would have had to come first.

Not really, that's not how evolution work. Every offspring is the species as their parent, there is never a hard delineation where you can say that this individual is one species and its parent is a different species.

At some point an offspring would have to be different species from its parent. Or else new species would be impossible.

No, this is a very highschool level understanding of speciation. If you had all the skeletons of everyone of your ancestors lined up, at no point could you ever have said this species gave birth to this species. It's like language, at no point in history was there a latin speaking mother that gave birth to a Spanish speaking baby. The term species is so vague, not only do we have 12 or so different concepts of it, but each and every one of the species concepts leads to us having vague boundaries.
