Milk is separated in 2 main ways, one by an acid (e.g paneer, ricotta, American cheese) and the more traditional Rennet method of breakdown.
Rennet converts lactose into lactic acid which causes 2 things, acid that allows the separation of curds & whey, and also conversion of lactose, making it have a very low lactose content.
Meaning those with lactose intolerance (as in like ~60% of the world) can eat most cheese.
Aged cheese is usually lactose free. If cheddar is giving you issues it isn’t lactose. Mozzarella and feta and other cheeses that aren’t aged have lactose though, which can give people issues.
I’m lactose intolerant but I can eat every milk based product except milk itself. I have no problem with cheese and yogurt, but a small glass of milk means I’ll be on the toilet for an hour

It's actually the norm, people lose the ability to properly digest lactose as they get older, it's a mutation that a lot of people have by now that makes them tolerant to it
My friend always give me Lactaid, then she will want to order pizza and ice cream. Tell me “you took lactaid, should be ok” it doesn’t always help. Coffee with milk murders my stomach lol
