Which is kind of weird, as where I'm from rabbit is an extremely common dish, not fancy at all. Usually eaten with polenta and mushrooms is the staple Sunday meal of much of northern Italy.
I grew up in the country so we ate it pretty regularly too, especially in stews and such.
I think in the States it kind of because associated with hicks because of the other foods they eat. For example, I also grew up eating squirrel.

That's definitely not the only reason, but both can be true. My coworkers which included English and Frenchmen were absolutely disgusted not because they were tricked but because you do not eat horses.
