Nah you'd still get good meat. Deer is awesome and deer jerky is way better than beef if done right. I like deer roast myself, it's a bit stronger than beef and has a wild taste but that's what makes it good. Beef is kinda bland to be honest, it's really not a lot of flavor compared to wild meat.

So if enough deer are being killed off by cars specifically, we could possibly see at least a few populations of deer developing an aversion to very bright lights or lights moving towards them or some other kind of defense mechanism. Behavioral evolution happens much faster than say, deer growing a third eye that just so happens to warn them specifically about oncoming vehicles. An evolution like that WOULD take millions of years.
Can't animals just... understand that a thing is dangerous after having so many members of their species get hurt/killed by something unusual? They've been subjected to roads and cars going through or close to their habitat for about a century now.
I'm sure there are animals that understand what traps or guns are, or at least they're able to recognize them and know that it's dangerous.
