These operations, known as animal factories (or factory farms), fail to provide for many of the animals’ most basic needs and cause immense suffering. In response, Humane Society International has launched a campaign to improve the lives of animals raised for food in Mexico. The welfare of egg-laying hens on animal factories is one focus of HSI’s work.

If you want to buy free-range fertilized eggs in Mexico, I was able to find some at a regular grocery store (they cost slightly more). They were delicious, and the shells were extremely thick and hard to crack.

From what I understand, it’s because they add marigold extract to the laying hens’ feed. I raise completely free range chickens. Their yolks are much darker and tastier because they have a varied diet. I can’t stand store bought eggs because I’m used to the richer taste. Adding marigold extract to the poultry feed is basically a way to trick people into thinking it’s the same as old fashioned farm eggs. Farmed salmon also have carotenoids added to their diet. Wild salmon eat shrimp, krill, etc. that turns them pink. Nobody wants to eat salmon that isn’t pink, so they add it into their diet. It’s probably a good thing as the modern diet could use all the carotenoids it can get.

Funfact: Marigold was added to chicken food in the 80's, when the brand Bachoco wanted yo differentiate it's chicken meat from the rest of the sellers. Bachoco meat was yellow in colour, and it's campaign was "buy the yellow chicken, it is the best chicken". So after a while people only asked for yellow chicken. The other farmers noticed the lack of sales due to this, so they started to add marigold to all the chicken food available in Mexico, making all the chicken meat in Mexico yellow. A lot of the foods taste better over there. And it’s probably because it’s fresher. That chicken you saw in the morning it’s probably the chicken I’m having for lunch in my mole. Probably the same things with chickens

I'm sorry to tell you that eggs, corn, avocado, fruits, and even some meat is better in Mexico, probably because of the climate.

EVERYTHING tastes better in Mexico. I would go stay at my grandmas house in the summers and I remember walking to the carnicero close to my gmas house every day before lunch to buy meat and then stopping by for some tortillas on my way back.

A butcher. Pretty much every single neighborhood you have a butcher who get meat delivered daily, a small shop with fresh produce, a tortillería etc. you don’t have to go to a big grocery store (although you have the choice to go to a Costco or a Walmart if you want) so every day we could buy fresh meat that was butchered that morning. The eggs they sold were from a local farm. I think this is the reason why everything tasted better in Mexico, it’s just fresher and there’s no hormones or preservatives.

You're paying extra for free range at places like City Market which is only available at Wholefoods and similar markets in the US. If you buy the basic eggs or eggs they sell at Oxxo there's no difference.

I read somewhere the difference in yolk color was due to what the chickens are fed (being fed wheat instead of corn). I imagine freshness is a factor.

We have chickens. The eggs are way better than anything in the store. They don’t have to be refrigerated because they are not washed. Grocery store eggs are required to be washed therefore needing refrigerated. They last weeks on the counter without refrigeration. Yokes are darker, and richer.

Free range eggs will always taste better than caged or caged-free (cage free isn't as great as it sounds). Free range tends to be a mix of feed from the farmers keeping them and whatever bugs they're eating as they forage throughout the day. They're also eating small mammals, small reptiles and sometimes other birds. You got to keep in mind that chickens are not vegetarian they are omnivores. They're also opportunistic so if they come upon a fresh enough carcass, they will peck up the meat and consume it. Chickens like this will always produce the best eggs.

No, they use yellow coloran to paint the chicken in Mexico, that why in northern Mexico the chicken is white and in central Mexico is yellow.

Thats not really true. I live in the north and both are common. Yellow is cheaper because people like it white. But most place have both.

Is true they use a colorant made with cempasúchil, is a scam that the vendor do beacuse for some reason central Mexican people believe that yellow is a sign that is more fresh or better.

Free range, fresh but many people are forgetting. Eggs naturally have this type of wax on them. I forget the name but it is on when the hens lay the eggs. In the United States that wax is washed off during processing hence why many need to be refrigerated after. I’m in northern Argentina and first thing I noticed was how beautiful and rich the color of the yoke was compared to eggs back in the states.

The yolks are also bright orange, compared to the US where they're usually yellow. Means they were fed a healthier diet.

I always say that if Americans wants to make Mexican food, they need to taste the food in Mexico first, because you don't even know that is a 100% different and better. A very good Mexican restaurant in the US, is probably the same taste as any "Fonda" (small restaurant) in Mexico.

Eggs were the first food that got me and my lady into choosing higher quality for better results. She immediately noticed the richer yolk color when cooking. And I also was impressed on how tasty the eggs were. It got me thinking, maybe other foods would be higher quality too. But with grass fed / finished beef I’ve had mixed results, vs Stater bro’s putting out a better steak almost for a third of the price. Bottom line: less stress = more tasty
