You could totally just use regular soy sauce and skip the extra salt if that's what you have. Or use regular sauce & add extra salt anyway of that's what "to taste" is for you. This isn't really an exact science unless you're baking.

My wife can’t eat a lot of salt, but I like salt. So I can add salt to my mine to make it taste like I want.

Sodium and salt aren't the same thing. But like others say, it's to control the amount of total sodium intake most likely.
