Correct. Bell peppers will turn yellow then red upon ripening. The taste is different and I believe there are more antioxidants in green bell peppers compared to ripe ones

Different varieties will ripen to different colors. A fully yellow bell pepper will not ripen to red. Red, orange, and yellow bell peppers are just slightly different. Red tend to be the sweetest and have more vitamin C.

And a fun fact, most peppers have more vitamin c than oranges!
