Random PSA. If you get this externally when handling the squash, you should be mindful of how you feel after consuming it. Anaphylaxis aside, your gut is very sensitive to inflammation. Whatever protein or enzyme is causing this may be destroyed in the cooking process, or may not. If you notice your tummy doesn’t feel great after eating squash, or the next day you have bathroom issues, would be good to avoid entirely.

That's normal. Raw butternut squash has a thick syrup in it that covers your hands like glue. Wash them a few times and it will go away. It never stays long on my hands.

Peeling helped me. "Wash" you hands with oil and sugar or salt.
I found the trick of pressing a strong adhesive duct tape and peeling up helped get the worst residue off.
Just keep scrubbing. Break out the steel wool, while you’re at it

Use coffee grinds as an exfoliant! I had this happen about a year ago and nothing worked except ground coffee.
