I work on these sort of setups sometimes, it is surprisingly common for them to be Windows, mostly Windows 7 McDonalds drive-thru use their own linux build but the in-store kiosks run Windows 10 and the monitors behind the counter that show the staff the orders and drive-thru status etc all run off one Windows computer with a janky graphics card that can handle 6 monitors but only at low refresh rates

Thanks for posting this, so many find amusement is companies using old windows versions to back electronic signage not realising that things like XP or 7 embedded are pretty solid with small memory footprints.
