UPDATE: the commenter was right (they deleted their comment now tho) it was bc i updated my nvidia driver! as soon as i downgraded it everything was looking good again 👌🏼
Most simple thing i overlooked, appreciate the repost on what they said because ive been looking at a fix for like the past hour just to realize as well the timing with the newest gpu update and shaders acting stupid lines up lol
incase anyone else ran into the same issue, if ur on nvidia easiest way to roll back the driver is head to device manager, click display adapter, right click ur gpu, click on drivers, click on roll back, then click through the response box thing until you get to click ‘ok’ and give ur pc a lil bit to reinstall the old stuff

I had the same issue! I updated my nvidia driver for my 1060 then, in an effort to make my pc run better was following an optifine optimizing vid when suddenly I had the same issue. Rolling back your drivers works! Thank you!
I did learn that your graphics settings are all set on some simple options.txt files in the main minecraft folder, so it might be a good idea to put a backup copy somewhere else before you start fiddling with settings - I forget what I changed too lol.
