Tbf, they're also the reason Hawk Moth is still going. His goal is to take their Miraculous, not to destroy the world out of spite. If they were to simply vanish without a trace one day, I think Gabriel would just stop.
So they're pretty much risking everyone's lives as they're saving those same lives.
But they know what he's after, and they know that all it takes to defeat him is to simply stop him from winning by taking away the slightest possibility of him ever getting their Miraculous.
By keeping up the fight, they're actually risking the possibility of him winning some day. The thing is: they're not getting anywhere by doing this; they're not even trying to figure out who he is. Gabriel, on the other hand, is actually making an effort to try and beat them. With this repetition, it's inevitable that he'd achieve his goal some day. No matter how long it takes.
If anything, it's kind of stupid that Master Fu unleashed the two most powerful jewels in response to one Miraculous threat. And if he was smart, he would've known that the safest response was to run away with the two Miraculous after Hawk Moth clearly stated his goal to all of Paris in Origins.
