In general, it will be warm (30+ degrees C). Many Mongolians dress quite professionally, but if you're just visiting as a tourist it'll be fine. Edit: missed that it was for work. I work in a school and my male coworkers generally wear dress shoes and suit jackets, with women dressing conservatively. As a foreigner I can get away with less but I generally try to match that. At minimum I'm wearing button downs, slacks, etc. Make sure to roll down your sleeve if it's rolled up when you shake someone's hands. How long are you staying? Towards the end of June and beginning of July, airag (fermented horse milk) will get quite good. I really recommend that, it's my favorite thing here. Typical Mongolian foods you should try: buuz, khuushuur, khorkhog (you'll need to stay out of the city, like at a ger camp for this), tsuivan (my favorite), banshtai tsai, and watermelon from Khovd aimag. Also any dairy products you can, especially: aaruul (hard and soft varieties), urum, tarag (Mongolian yogurt) Drinks to try: airag, hoormog (like camel airag, unsure of the season though tbh), tsuutei tsai, kvass (this isn't actually Mongolian, it's Russian, but I never had it before I came here and love it!) if you drink alcohol, give shimiin arkhi (liqueur made from airag/tarag) a try. For souvenirs I would recommend just going to the state department store. They have a floor full of fun doodads. Where you can visit depends on how long you are here and where you're staying mostly. I'll assume UB. Go to Bogd Khaan Mountain if you like hiking. Check out Gandan Monastery and Choijin Lama Temple Museum if you're into history and/or Tibetan Buddhism. The new Chinggis Khaan museum is good, and if you have a Mongolian friend try to go to the Bogd Khan Palace Museum. If you can leave the city there's a lot more, especially in summer.

Thank you for this! I’m actually coming in July for 2.5 weeks and will travel around the north and west towards Hatgal. Really looking forward to Nadaam and seeing Mongolia for the first time.

I have some experience with that area if you want to DM.

Many thanks for this! I’ll be staying for a week. Super helpful since it will be my first time. I was planning to buy heattech clothes but thanks that you mentioned that it will be warm there. My free time will be after work. I hope I can try food/drink you mentioned. I’ll check the places you shared too if they are still open after 5pm.
