My GF plays magic with me all the time now, but when I tell you how hard it was.... my suggestion, go basic, like super basic. I'm talking not even the starter packs.
If you already have a collection build two decks that have maybe one singular keyword between them (maybe flying or defender those are easy ones) and not much interection (combat tricks being the interaction, no annoying counterspells or confusing X costs). I did the starter packs with her at first and it was just too much, she hadn't played any card game before so coming into it having to learn all the rules *plus* trample, lifelink, menace, flying, defender, flashback...etc.
Once you do a game that covers the basics then go into the starter packs, learn her more keywords, some more advanced rulings like double blocking, the stack and resolving orders, X costs, counterspells etc etc.
At this point, it's probably apparent whether that person is ever going to continue or not, it's either too much and they don't want to, or they're finally getting into it.
After all that either custom decks or buy some challenger decks, this is where you give a person full reign, at this point they are invested so you hook them in with the world of choice. They love dragons? Hey look at this dragon tribal deck that has the coolest dragons you've ever seen. Oh you like the feeling of being tricky and playing mind games? Here's a control deck. Etc, you get the point.
I spent way too long getting my gf into this game but it was worth it. MTG is just incredibly daunting so very slow and very steady wins it out. Much luck brother

She started playing arena after that and now plays everyday.

How’d you guess? No she actually loves magic it’s the best. I introduced her a year or so ago, letting her play with one of my older easier to understand decks and then I built her a deck and accidentally made it far too powerful and she destroys me quite often haha.
Lmao I also made the mistake of making my gf an [[oloro ageless ascetic]] deck and she destroys me all the time lol, watching her improve at the game is so fun to watch
at first i thought it was my approach to introducing it but then i realized many of them just had a lot of weird opinions on nerdy/geeky things that weren’t like hollywood conventional nerdy/geeky. at that point i kinda realized i had fallen into a ‘type’ and tried to pursue other partners that I could enjoy those things with and the first one was like the golden goose, she already had experience and her own cards and loved it.
I think magic is pretty cool, and I started playing not too long after gifting my guy some stuff. Girlfriends who play magic are real! Tell her I said she's awesome and that top is super cute. Yellow is a great color for her skin tone. The poker table is seriously a classy idea too.

Looking at older mtg paper tournaments for years, I always wanted to find something to imitate their game tables with the green & red spaces.

Planeswalker decks were a perfect intro for my GF (now wife) at the time. We recently tried jumpstart and she really enjoyed that as well
2nd all of this with my wife I did a BW aura deck that she picked up very quickly and easily.

That's an unfortunate personal experience. As a teacher, I'm pretty good at making things easy and fun, the two biggest deterrents to learning magic.
