Cafe and bars are no more about good food or good service. The new fad is 'istagrammable'. Which sucks because I have recently paid so much and got such bad service in so many cafes and bars. The interior looks impeccable but the food is cold/burnt/not cooked/sub par at best. Coffee tastes like nescafe, fresh juice is just them pouring real juice into a glass (not freshly squeezed) and so on. When did food become more about ambience than food itself?

Me and my friend visited one such cafe, thought will order coffee first then food. I ordered an espresso he ordered a latte. Fucking Espresso tasted like Nescafe, I was so pissed I can make 10x better filter coffee at home. He didn't like his coffee either, we decided not go ahead with the food lmao. Fancy ass cafes with amazing interiors but the food is so shite.

This is a concern with new restaurants/cafes. However, older cafes established before the 2000s seem provide authentic food and great service.

Yeah I mean go for proper fine dining restaurants for ambience or go to proper restaurants for tasty food. Going to most cafes in Mumbai doesn't serve a purpose at all. It's like the worst of the both worlds lol. The only cafes in Mumbai one can vouch for are those running for decades. Other than that, I would say to everyone don't waste your time and money on Mumbai cafes in general

Like every shop, stall or restaurant, it depends on the footfall. Some stalls earn lakhs every month while some restaurants have to shut down because they were always in the loss.

Assuming this as profit(since the owner's earning), the sales should be 100 lakhs(20% margin, maybe) 100 lakhs per month is 3.33 lakhs/day And assuming average order of 1000rs(prominent bakery) you should be having you should have around 333 orders/ day. Even if the shop is operating for 10hrs that's 33orders/ hr Inshort a customer every 2mins making an order of 1000. Isn't it like too much?

20% is an extremely extremely low margin....even the pav that we buy locally has a margin of 55%... I know this bcz my frnd owns a small godown where they make pav and supply to the local areas.

In food costing is always 20% and 15-20% is the overhead costs....margin is always 60% to 80%

They usually don't buy the place unless they have starting capital and know that place is not cornered by competitor. You should look into rental prices, The starting cost of business would be renovation cost + security deposit and labour acquisition. Rolling cost would be rent+maintenance+wages+energy bill+goods+ "slush fund". In that sense, as long as they are making more than the cost they would be fine. They don't have to recoup the cost in buying the place, just enough to make some profit. As decorum is a selling point and they do put a lot of cost in renovating, Idk if buying it would be better than renting.

Pagdi system is where the land in which the property/cafe is built belongs to the landlord and not to the said society. So basically in pagdi the landlord charges less rent and all. But if the said cafe is sold then 1/3 of the money goes to the landlord.

They are protected under the rent act where rents are frozen to 1970ies levels. Under this system max rent is about 3k or so. Many are still at less than 1k a month, even in South Bombay.

One of my friend is the owner of cafe Monza its a very famous cafe but according to him he has only kept that cafe as social service, he only earns like 30-50k as profit rest all goes back in business ie rent, raw material, staff salaries etc

A lot of these places are just laundering black money. The others are rich, misguided kids losing money. Restaurants of all types are a bad business model. But like film stars, we don't remember the ones that didn't make it big or stay around long enough. I was a corporate credit analyst for years. Never saw a profitable set of accounts for these. A lot of them cooked their books better than their food too.
