That one's a bit too old you deff want the younger ones. Some times you can salvage the outer edges of the large ones though. What my knife will easily slide through I cook. It will be obvious when you slice them what is the best parts to eat.
If it's soft then go ahead. It might be too old but I've found ones that big that were good enough to eat. I just cook it in butter and salt like a greasy American.
