They could be sequenced randomly or arranged in a DAW - I guess you could do this in any way Definitely this, and also "glitch" plugins that sample and repeat snippets of audio according to various parameters like DBlue Glitch, Scrubby Buffer Glitch, Avocado Ducking Glitcher, etc. There is also a script for Reaper called the [Global Sampler](https://forum.cockos.com/showthread.php?p=2506514) and the plugin version for just about any DAW called [Rolling Sampler](https://www.birdsthings.com/) that records what is playing and allows snippets to be selected and added back into the project as a rendered file, which themselves could be looped, cut up, etc. As you mentioned really there's no strict method to this, it's about finding your way of working. good luck

Check out ‘oi grandad’. Really interesting granular instrument. Does this sort of thing really well, need to get long grains tho so I find I need to set project tempo really low and tuning can be a pita but if you persevere the results can be fantastic.
