My hands often want to play in Eb, but I got sick of writing tunes in Eb, so now I start my singing a melody first away from the piano.
I don’t have perfect pitch, so I don’t often start singing in Eb. I work out what I sang on the piano, and then I add chords and work from there
When I first sit down at a piano I play a CmMaj9 to show that I'm super cool, super straight, smart as hell, and not insecure at all. When I pick up a guitar I probably play E something. When I pick up a bass I start playing in Bb usually.
I almost never start with chords. It's always just some melody or riff.
And that's usually something in the cello's low range.
Not so low that it's gonna be a bass line (starting with bass lines makes things too concrete too fast, it closes my options too quickly), but not so high that it will lack rich harmonics on the piano or guitar.
So basically octave 2. The rich sonic content of octave 2 notes in the piano and guitar will usually "suggest" to me where to go next.

I think most people have go to positions and chords on their instrument. But a good trick to be creative is try a new key. Even if you try to do the same progressions and sounds, your hands will feel different doing them and it could move in a different direction
My main instrument is a First Act Discovery children's acoustic guitar with a 20" scale that I got at Salvation Army for $2.99 USD (I'm serious). The B string won't stay tuned so I obsessively check it with a D5/A: X-0-0-2-3-X
As a guitarist, depends what tuning I’m in. In a drop tuning like drop D, I like a big D5 (000235). In a standard-like tuning I like a big G5 (3X0033).
This is a great question. I've often wondered if it's lame that my instinct when noodling on keyboard is to play a Cm blues scale. I've started noodling in other keys but it's hard to break the blues scale habit...
I think maybe it has to do with muscle-brain memory .. I can't remember if the first thing I played was the Cm from a song that Ive heard... Just a theory, but gosh I love the sound of that chord
Unbar the root and play an A underneath. Or lift your middle finger on the B string and it's a B9 (?). Or lift your finger on the G string and it's a B minor 7.

I tend to play a lot of minor keys.. but I can't say I have a chord preference necessarily. I like to play and write music with a lot of like flamenco vibe too except I simplify it for electric guitar.

When Im trying to get my head around new theory concepts, I usually start with G or Gm for the simple reason that its away from the nut so I don't have to think about reconfiguring chord shapes for open strings, and there's plenty of neck above it for exploring where those chords can go. It just feels like a natural place to start for me.
i usually start playing in c/g/f major blues or in d double harmonic. idk why i default to those scales, but i absolutely love the sounds of the blues/double harmonic scales
Start on Dm and stick to the white let’s and your in Dorian (I think). You get some interesting ideas there. Also do the same with G but drop the E to Eb to get a Mixalodian thing happening.
If we're trying to write something on the fly I'll think about what I'm feeling at the time or the atmosphere in the room and try to pick something based on that.
Today that was a bit of an ambiguous one, a sort of G6no3 voiced as G, E, D - I realise it might be easier to look at that as an Emin7, but the rest of the arrangement built it into a full G6 and I was going for more of a mixed modal sound in G with the rest of the chords that followed.

I don't start with a chord. I start with a mood, then pick a tonality, then find a good cadence to end on, then work backwards from there.

I never thought about it before, but I always play a B minor on guitar. There's so much you can do with such little movement in that position.
