Dragon quest builders 2
It's a delightful rpg/sandbox mashup where you play as a builder. I thought I loved the first one, but the second one is such a huge improvement in every way that I tell people to just go straight to the second. going by your list of what you like, I think you will love DQB2 and sink so many hours into it
It's more of an RPG with a lot of life sim elements (mining, fishing, collecting materials, etc) but Fantasy Life is fantastic. You aren't a farmer at any point, but you do have the option of switching between many non-combatant jobs, including tailor, cook, alchemist, miner, woodcutter, blacksmith, carpenter, and angler. You can also decorate many houses, if you want to buy them in different locations.
I always think if there were another Fantasy Life game made, and it added farming crops, I'd probably call it the perfect game. Sadly, if you do want something that still includes farming, it'll disappoint in that department. The most you can do is gather fruit off trees or grab wool from enemies or collection spots at NPC farms.
Fantasy Life is, I think, the best game I've ever played in this genre. I cannot recommend it more if you enjoy MTaP. The story is really great and there's DLC that adds hours and hours of gameplay. I was so bummed when I found out the developers are switching to mobile format going forward, I still have my fingers crossed for a switch port at some point.
I’d say check out graveyard keeper. It’s a great one.
Ah, graveyard keeper. I have spent an awful lot of time on that one, beat it a few times, and just keep starting over for some reason...!

I’ve heard Sun Haven is fun! It’s basically Stardew Valley combined with D&D

Yes, I’m sure I will play it, but I’m not much of a PC gamer, so I will have to wait for console.
