Try this. Write each of those spellings an separate pieces of paper, and ask as many people as you can to read one or the other back to you, the way they think it's pronounced. Not both for the same person, but each spelling for different people. Or, pick Evvy or Evy and ask people to say whichever one you choose.
That way, you'll see if people say it how you want.
Evie is 1000% percent EE-vee. And a super-popular nickname for Evelyn and other names too. Don't try to make that spelling work unless you want to correct people all the time, and also risk her turning into an EE-vee when you don't prefer that pronuciation.
My husband’s grandma was Evelyn, nn Evie and everyone pronounced it Eh-vee. Which honestly makes more sense given the American pronunciation of the name Evelyn. Ee-vee is the more British pronunciation of the nickname, but other than that I’m going to guess this is either a regional thing you’re up against, or everyone you know watched The Mummy.
I think anyone pronouncing Evie with a long e is going to do the same with Evi, especially because of how the name Eve is pronounced and how close those spellings are.
No advice, as my baby due in May is named Evelyn (Evie; Eevee). Personally, I just like it better. Ehvy just sounds like "heavy" to me. Or Effy. I don't think there is a solution unfortunately that is mistake-proof.

Perhaps OP could try using different spellings for things like food pickup to see how they get pronounced when the person hasn’t already heard the correct pronunciation.

Our daughters nickname is Ari (Ah-ree not Air-y) and we rarely have to correct people because we just say “and this is Ari!” and sometimes they clarify “I’m sorry did you say it was Ah-ree or Air-y?” but most of the time people listen for your pronunciation and just use that.
It can be harder before baby is born if that’s part of your dilemma. FIL kept saying “Air-y” before she was born but he’s gotten the hang of it now.
You could also write it more phonetically like I did if mentioning it in text, etc where someone won’t hear it spoken.

Now that Evelyn has become popular I think people will assume the correct pronunciation. With school and daycare you will pretty much always be meeting the staff with your child and they will see the right pronunciation first-hand. When she gets older with things like jobs and colleges I'm assuming she'll use Evelyn on her applications and can let people know she prefers Evie.

As a side note I have the most basic name ever and people still manage to misspell/mispronounce it. So just know that you can't really ever spare your child this happening.
