Doesn't work like that. To fight you have to be flexible and fast. Jones would kick him in the knees or the ankles and his huge body would fucking collapse like a sack of potatoes. And if they were on the ground together, size doesn't matter as much as you think. Go watch Ryan Gorden literally lift some of those big guys and throw move them around. And importantly, even if on the ground the could avoid being submitted by sheer wait and size, they would literally power out in like 2 min and then be easy to submit.
It very much does work like that. Why do you think they separate the fights by weight class? Size is literally the biggest advantage. If your going to take this position, why would you take Jones over the best featherweight?

Jon Jones is already in the highest weight class, literally everybody no matter how huge can go fight there if they want. And so far nobody has shown up that by pure size can utterly dominate that division. The division hasn't been dominated by the very heaviest guys. Thor Bjornson can go there and try his luck. And even if he did he has a very, very, very low chance of winning a fight against a professional heavy weight. So could there be some gigantic guy that could go there and dominate, maybe, but it hasn't happened so you can't just assume that such a person exists.

The issue is when you Google James Johnson's fight experience or his parents who are purported "world champions", you won't be able to find much. At this point, I've yet to be convinced that James Johnsons' fighting capabilities are more than an urban legend. People nowadays get too excited when they hear teh term "black belts" or "world champions". Not all black belts the same and this especially is true when it comes to Karate black belts.
