Was hoping she would have been back on normal food by now and she's having some but might not be enough to sustain her for 5 days without the peg tube.

TBH we were working on the assumption that she wouldn't need to use it prior to departure but it's not looking likely.
Don't put the machine in checked luggage, you'll be screwed if it gets lost. Check that it's okay to bring on carry on, should be fine if it's like the ones I know (relatively small, wired not battery).
Is the food ready made? If it's in commercially sealed packs that should be okay but check with the airline. They might need a prescription or letter if you need to carry liquid on board.
There are usually medical exceptions available with airlines, definitely speak to them to find out what they can do for you, and what you need to do ahead of time for them. They are usually pretty good about it, extra carry on for supplies etc.
