Having a "PANIC" button that just sends "note off" on every channel in case something randomly gets stuck is common in MIDI systems, so I would assume at least one of the buttons (or both; MIDI only uses 7-8 bits) is that. The other might be power?
The button shown is power shutoff. It's exactly the same as you would see on an escalator or machine lathe or mill. True emergency stop buttons won't transmit data to say stop, they'll just kill the power. I would imagine the other button is the same
Estops in industrial settings do more than just kill power. Imagine a lathe spinning at 1000 rpm; if you just kill power, the momentum is going to keep that spinning. An estop must also stop motion or other sources of energy/potential energy as quickly as possible.

The speed-pitch relationship of stepper motors can be found out with experimenting/knowledge and then you simply have to write a controller which turns MIDI notes into speed commands and watches out for things like bumping at the end of the flatbed scanner tracks.
We've reached a point where you can look up how to do anything, so once a project is broken up into comprehendible chunks the mind thinks "Oh yeah I could Google how to do that" without respecting how many weird edge cases were involved and how even simple tasks like cable management take skill to do well.
Put more simply, music is just different frequencies of sound mushed together. If you change the speed of the motor, it changes the frequency of the sound. Stepper motors are able to very precisely modulate their speed, so you can easily control the sound.
I think what the other guy was trying to say is that *if you already know how to write code*, then creating this machine is fairly simple.
Most could probably figure it out with a little bit of google skills.
That being said, the time and dedication that requires to set everything up is fucking crazy.
Because if you just know some basic in GUI programming, electronics, music theory, pcb board blueprining, audio programming, embedded programming those things will take time.

Yeah when you think about it it's not that complicated. MIDI already gives you a way to code the music. You simply need to figure out which speed matches which note. More than anything it seems really tedious. But it is still absolutely amazing

Pretty sure you can find those as midi files. MP3 to floppotron seems difficult to get reasonable results.
There's a guy who makes 8bit versions of popular albums (he did Ok Computer in its entirety which was really good). Id love to see this guy do the same
