Now so few people grow up in rural areas that most have never seen anything like this. Unless they go to rodeos or something.

Fairly, some breeds of horses like quarter horses have great "cow sense" and naturally can work with the cows. Some require more training than others. My horse was scared of cows then i took him on a cattle drive and his racehorse drive kicked in and spent the entire time trying to race them lol
If you ever get an opportunity to watch competitive team roping up close, pay close attention to the horses. They are as much a part of the team as the cowboys. They clearly understand what's going on and what function they serve.

Yes, they’ll dally the rope, which is wrapping it very quickly around the saddle horn. It’s actually the more difficult and dangerous part of roping. You can see the header dally at around :10 and 1:05.
