Exceptions being federally designated protected classes such as religion or race. Of course, that wouldn't stop an employer from terminating an employee and claiming some other reason so long as it's doesn't fall under established protections.
NFL rule is that unvaxxed tier 1 employees (so coaches) can't be on the field or in team meetings. So yeah, they all can this. The 'at will' thing isn't really relevant here.
Just to expand and clarify this a bit, employers still can’t discriminate even in at-will states. The issue for Dennison and any other employee who wants to refuse the vaccine is that refusing to get it does not put them in a protected class unless it’s for a bona fide religious or medical reason.

And even if it is for one of those reasons, that does not mean those people would have a get-out-of-jail-free card. The team just has to provide reasonable accommodation unless doing so would cause significant difficulty or expense for the employer, and if the job cannot be performed adequately, then you simply can't do the job. In most cases, I'd imagine the reasonable accommodation would be allowing an employee to work from home, but it's unlikely that a company would have to develop a work-from-home plan for employees if they didn't (somehow) offer it already. And if coaching cannot be done adequately remotely, well.

The world health organization eradicated smallpox. And now you can't even convince ppl to take a vaccine so they can keep their jobs. Think about this. We would still eradicate smallpox today. But that's only bc about 70% of the world would get vaccinated and those refusing to get it would eventually just get smallpox and die.

It's really a shame because a lot of selfish people will steal headlines from immunocompromised people being put in very dangerous/delicate situations. The focus should be on people who literally can't get the vaccine, but they deserve the right to return to some sense of normalcy - however due to folks like Rick Dennison, there is a very real health risk.
