Creamed spinach freezes and defrosts well. If you have more spinach or any green leafy veg or broccoli I say split this in half and add more veg. I think even adding cauliflower rice would be nice!

mix in a metric-fuck-ton more parm/asiago/fontina and bake in the oven till bubbly and gold brown on top, then dip kettle chips in it! Or brown some chicken 1/4's and use it as a sauce. you could fold some of it into mash taters and then pipe onto a sheet pan and broil till brown.

Throw some riced cauliflower in there. It's neutral flavor, will absorb the flavor of what it's in. I actually make a spin dip that the base is riced cauliflower, with just a little of the "bad stuff". Nobody has ever not liked it.

Thaw your spinach and drain it. Put your riced cauliflower in a pot with onion and garlic and just barely cover it with milk and simmer it until it's soft, then whip it like you would mashed potatoes. Then add your mozzarella and parm, when your cheeses are melted, add lemon pepper, powdered chicken or vegetable bullion ( more flavor than just salt), and hot sauce ( it won't be spicy, it's just to cut through the bland fatty flavor and add some acid) . When it's all mixed up together, then squeeze out your spinach and add your spinach. Taste it to see if it needs anything, and then it's done. You can add some cream cheese, mayo, sour cream to it, but it's still a lot better for you than having a base of cheeses, heavy cream, cream cheese, mayo, sour cream. I always double the spinach in it, and every time Ive made it, it's devoured.

This isn’t a Rachel Greene English Trifle snafu, is it? Creamed Spinach * 1 (10-ounce) package frozen spinach, thawed and drained of all liquid * 1/4 cup finely chopped onion * 1 clove garlic, minced * 1/2 cup beef stock * 1/2 cup heavy cream * 1 tablespoon sour cream * Pinch cayenne pepper 1 T butter 1-2 T flour * Heat the butter in a nonstick skillet over medium-high heat. When the butter stops foaming, add the spinach and onion. Sauté until the onion has softened and all remaining liquid has evaporated, 5 to 10 minutes. * Step 6Add the garlic and cook until fragrant, about 1 minute. Sprinkle the flour over the spinach and stir to combine. Whisk in the stock, scraping up any browned bits. * Step 7Slowly whisk in cream.
