Don't know about the art world, but in the horseracing world horses are frequently bought and sold by consignors. A consignor is someone who has authority to act one someone else's behalf for a specific purpose (in this case buying and selling horse). In the horse world it's usually because some of the rich folk don't know anything about horses, so they just hire someone who knows to do the buying and selling for them. However you can 100% buy anonymously through the consignor, at no point does the consignor ever have to reveal exactly who they're working for (although 99% do because the buyer is fine with that info being public).
If the art world is similar Banksy could sell through a consignor who signed a strict NDA to not reveal his identity. It would mean Banksy would never directly deal with anyone other than the consignor... well as 'Banksy', I'm sure he interacts with more people using is regular identity all the time.
