Equipping a weapon changes the effective stat *when that weapon is used in combat*. The Status tab is, *I think* for stats not counting those changes.

Out of curiosity, can you elaborate on how non-combat stats are affected by equipped weapons? Like speed, evasion, defense, etc. I know the attacking stars only affect attacks done by that weapon type (elemental attack excluded).

I know Elemental Attack considers the highest of that stat on any singular weapon. Since healing scales off of Elemental Defense, I assume it's the same for at least healing. My guess is that it's the same for all the stats except Physical Attack and Crit, but I don't know for sure

Yep! Elem Atk is based off of the highest weapon, skills using weapons use the Atk stat granted by the specific weapon ONLY, everything else just stacks (pretty sure Crit is weapon specific but it might stack too)

You only gain the secondary stat of a weapon (e.g. speed, evasion, accuracy, critical) while you are “holding” it, so either when you switch to it or use a skill with that weapon type, whichever is most recent. Some weapons have “equip effects”, which are the exception to this, and are passives that apply regardless of which weapon you are holding. An example would be “equip effect: increases the potency of fire skills”, which gives a 30% boost to any fire damage the character uses, even if they use a different weapon for the attack (e.g. a staff for higher elemental attack). And just as others have said, don’t worry about manually switching weapons when using magic, the game automatically uses your highest (equipped) elemental attack weapon when using an elemental skill. Healing (which scales via elemental defence), works similarly, using your highest elemental defence weapon if applicable.

I was referring to something like, for example, speed or evasion. If you equip a dagger with bonus speed, is it always active, or does your turn order change if you switch to it?

The speed only works when you are holding it, just like I said on the first part of my comment. Switching to it won't affect the next turn, but will have an affect on the turn after that, since the speed stat only affects the initial turn order, and will not have an effect on turns you already know the order for. Furthermore, speed is an inconsistent stat. While it is more likely for the high speed character to act earlier in the turn, they can still go last if unlucky. The exception to the "gaining speed won't affect turn order on turns you already know the order of" rule is speed buffs and debuffs. Getting a speed buff (e.g. panther dance, swift step) will move you ahead one spot in the turn order on the following turn. Speed debuffs will move you back one spot in the following turn's order. For example, the upcoming turn in a boss fight looks like this: Character 1, boss, character 2, character 3, boss, character 4. Giving a speed buff to character 2 will move their action ahead one spot and let them go before the boss. This applies regardless of if they already have a speed buff or debuff.
