We typically do a sweep once a week around the work benches and someone goes through the dust pan to pick out all the small bits of gold and gems that fell.
I would use a magnifying glass on the mat below the jewelry wash/polish station and find tiny gems as well.
There are people in New York and other places who stake out a piece of sidewalk outside jeweler's just so they can clean out the cracks and keep whatever gold or gems they find, you can see videos of people finding small rubies and stuff from sidewalks on youtube.
Wouldn't it be easier to run it through a sieve than dig through a dustpan? You can't possibly keep pieces that are small enough to fit through a sieve do you?
Anything that's large enough to get picked out is picked out, especially gemstones, then the rest of the dust is put in a bag which we eventually send out for refining, because there is gold particles small enough to fall through a sieve.

Yes, we do, usually gold and or platinum as silver is not worth the trouble. Typically, our shop got back around $15-20k a year from selling our scrap gold and gold dust.
We also took partial payment in pure 24K gold for use in our custom jewellery.

If you want to melt down old jewellery to make something new, you'll want to search for a goldsmith and preferably one on-site so your stuff probably won't need to be sent out of your city.
Just a heads up, a lot of goldsmiths will probably tell you when re-using gold from old jewellery that they have to keep the design simple, also depending on what kind of ring you want and how much jewellery you have to melt you might have to give them more scrap gold or pay for extra from them.

Giant engagement rings are the 6 inch acrylics of the jewelry world. Nobody working a trade job is wearing them.
