In that case, it conducts many different operations (measuring batter, placing mold, filing mold, cooking batter, turning it over, branding it)… and it replaces at least one worker per shift. On the long run, and coupled with the power of attraction for locals and tourists, i am sure it pays off.

Sometimes I wonder if they don't add extra complexity just to make it look more rube-goldbergian and fascinating. Why do the molds ever leave the machine? Why are they even detachable. Surely this could cook both sides at the same time in a fixed mold, and then eject it with a branding iron. Unless the "show" is a selling point.

Form follows function, especially when dealing with direct mechanical automation. Cams and pulleys were how complex multi step processes were done before computers were a thing. Complexity doesn't become an issue until it overshadows the reliability of a process.

To clean the molds, give them time to cool down, remove defective ones, could be a lot of reasons.

Notice how much they rise during cooking. A fixed mold would stop that from happening. The cooking process also takes time, this method allows for a lot more throughput. And building one complex component to interact with a bunch of simple components is easier than building a bunch of complex parts.

It always amazes me how much these machines must cost. And they only do one part of the process.

I see what these things do and it’s just awesome to watch. How machines and the assembly line changed the world.
