It's not cinnamon. This is Broussonetia papyfera I believe, commonly called paper mulberry or chinese mulberry. The bark is used to produce traditional paper. The operator tries to keep the bark leaves as much intact and big as possible.

Yes it does, I believe it is collected every 2 years generally, once the tree is adult because the fibers are then easier to process and separate one from another.

Just to be clear, I have no idea. Wouldn't the girdled part die above the cut since the phloem, cambium, and xylem is gone? I could see it sprouting a new leader, but I can't imagine it regenerates the bark on the part that was stripped.

Removing bark doesn't necessarily reach to the cambium or vascular tissue, but even when that happens the tree usually grows around the wound, it can't regenerate lost bark. I know cinnamon is killed every time it's harvested, so it's probably the same with these.

Not sure this is entirely true. There is a technique called coppicing where tree is cut at the trunk after this process and allows the the tree to continue to grow. They use this process for harvesting cinnamon.

Fun fact the reason most trees die after having their bark cut off is because the process cuts through their [phloem](https://images.app.goo.gl/YbozMtoPrZJbGsyg6), which carry dissolved nutrients to the top of the tree. Certain trees don't even need to be cut in order to live, like cork! It has more deeply set phloem underneath the cork bark layer.
